Extra-crispy double-cooked chicken glazed in a sticky sweet-and-spicy gochujang sauce. The air fryer nails that signature shatter-crisp coating with far less oil, making addictive Korean fried chicken achievable in your own kitchen.
Ingredients
- 800 g chicken wings and drumettes
- 4 tbsp cornflour
- 1 tbsp plain flour
- 1/2 tsp baking powder
- 2 tbsp gochujang
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp sesame seeds
Method
- 1Toss the chicken with the cornflour, flour and baking powder until dry-coated.
- 2Preheat the air fryer to 200°C (400°F).
- 3Cook for 12 minutes, then shake and cook 8-12 minutes more until deeply crisp.
- 4Meanwhile simmer the gochujang, honey, soy, vinegar and garlic into a glossy sauce.
- 5Check the chicken reaches 74°C (165°F), then toss in the warm sauce.
- 6Scatter with sesame seeds and serve immediately.
