Extra-crispy double-cooked chicken glazed in a sticky sweet-and-spicy gochujang sauce. The air fryer nails that signature shatter-crisp coating with far less oil, making addictive Korean fried chicken achievable in your own kitchen.

Ingredients

  • 800 g chicken wings and drumettes
  • 4 tbsp cornflour
  • 1 tbsp plain flour
  • 1/2 tsp baking powder
  • 2 tbsp gochujang
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp sesame seeds

Method

  1. 1Toss the chicken with the cornflour, flour and baking powder until dry-coated.
  2. 2Preheat the air fryer to 200°C (400°F).
  3. 3Cook for 12 minutes, then shake and cook 8-12 minutes more until deeply crisp.
  4. 4Meanwhile simmer the gochujang, honey, soy, vinegar and garlic into a glossy sauce.
  5. 5Check the chicken reaches 74°C (165°F), then toss in the warm sauce.
  6. 6Scatter with sesame seeds and serve immediately.
