Air Fryer Chicken Kabobs

Juicy marinated chicken chunks threaded with peppers and onion cook in a fraction of the grill time. The air fryer chars the edges beautifully while keeping the chicken tender, making these skewers a weeknight winner.

Ingredients

  • 600 g chicken breast, cut into 3 cm cubes
  • 1 red pepper, cut into chunks
  • 1 green pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt and black pepper

Method

  1. 1Whisk the oil, lemon juice, paprika, garlic powder, oregano, salt and pepper in a bowl.
  2. 2Add the chicken and toss to coat; marinate for at least 15 minutes.
  3. 3Thread the chicken, peppers and onion alternately onto skewers that fit your basket.
  4. 4Preheat the air fryer to 200°C (400°F).
  5. 5Cook for 12-15 minutes, flipping halfway, until lightly charred.
  6. 6Check the chicken reaches 74°C (165°F) at the centre before serving.

Tips for the best results

  • Soak wooden skewers in water for 20 minutes so they do not scorch.
  • Cut the chicken and veg to a similar size so everything cooks evenly.
