Air Fryer Chicken Kabobs

Juicy marinated chicken chunks threaded with peppers and onion cook in a fraction of the grill time. The air fryer chars the edges beautifully while keeping the chicken tender, making these skewers a weeknight winner.
Ingredients
- 600 g chicken breast, cut into 3 cm cubes
- 1 red pepper, cut into chunks
- 1 green pepper, cut into chunks
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- Juice of 1 lemon
- Salt and black pepper
Method
- 1Whisk the oil, lemon juice, paprika, garlic powder, oregano, salt and pepper in a bowl.
- 2Add the chicken and toss to coat; marinate for at least 15 minutes.
- 3Thread the chicken, peppers and onion alternately onto skewers that fit your basket.
- 4Preheat the air fryer to 200°C (400°F).
- 5Cook for 12-15 minutes, flipping halfway, until lightly charred.
- 6Check the chicken reaches 74°C (165°F) at the centre before serving.
Tips for the best results
- Soak wooden skewers in water for 20 minutes so they do not scorch.
- Cut the chicken and veg to a similar size so everything cooks evenly.
