Why some pork goes to 63°C and some to 90°C

Lean cuts such as chops, tenderloin and loin are safe at 63°C / 145°F after a 3-minute rest, and they are at their best there. Past that they dry out quickly, which is why overcooked pork chops are so common.

Ribs and shoulder are full of collagen. They are safe at the same 63°C, but they are tough until the collagen breaks down, which happens at much higher temperatures over a longer time. Taking them to 88 to 90°C is about texture, not safety.

Sausages and anything minced need 71°C / 160°F in the centre, for the same reason as a burger.

The figures are counted from the 304 recipes published on RecipeAirFryer.com on 2026-10-08. Each recipe has one temperature, a time range, a prep time, an ingredient list and a serving count, and those fields are what is counted here.

The times and temperatures are the starting points given on each recipe page for a standard basket air fryer. They are not laboratory measurements, and air fryers differ between models, so treat the counts as a description of this recipe set, not of every air fryer.

The USDA safe minimum is 63°C / 145°F with a 3-minute rest for whole cuts of pork, and 71°C / 160°F for minced pork and sausages.

Energy cost uses a 1,500 W air fryer with a 3-minute preheat at 26.32p per kWh (Ofgem price cap, October to December 2026) and 18.31¢ per kWh (EIA U.S. residential average, July 2026). It is an upper limit, because the element cycles once the basket is hot.
