Why these foods need low heat

Baked goods have to rise and set before the top browns. In an air fryer the element is a few centimetres from the food and the fan is strong, so a cake at full heat forms a crust while the middle is still liquid.

Eggs are protein and water. Heat them fast and the protein tightens and squeezes the water out, which is what makes an egg rubbery. A gentle 130 to 150°C sets them evenly.

Drying works on the same logic from the other side. Fruit chips and jerky need hours of warm moving air to lose water. Higher heat would cook the surface and trap moisture inside.
